| Definition. The phospholipid bilayer is a double sheet of phospholipid molecules — the fabric every cell membrane is woven from. The water-loving heads face outward, the water-fearing tails hide inside. | Definicja. | How it works. Each phospholipid has a hydrophilic phosphate head and two hydrophobic fatty-acid tails. Dropped into water, the molecules sort themselves out: two layers form, tails tucked inward away from water, heads facing the watery inside and outside of the cell. The oily middle blocks ions and large water-soluble molecules — that is the barrier. And because the molecules only cling, not bond, they drift past one another: the sheet is flexible and seals itself after small tears. | Jak działa. | Why it matters. The bilayer is what makes "inside" different from "outside" — the precondition of every cell. It explains the membrane's rules: small nonpolar molecules pass freely, ions and sugars need protein doors. Fosfolipidy są cząsteczkami amfipatycznymi (amfifilowymi): mają hydrofilową „główkę” z resztą fosforanową i hydrofobowe „ogony” z kwasów tłuszczowych, dlatego w środowisku wodnym samorzutnie tworzą dwuwarstwy, micele lub liposomy. W błonach komórek zwierzęcych między fosfolipidami leży cholesterol, który reguluje płynność błony.

AP Biology deep dive¶
Amphipathic chemistry drives self-assembly. The bilayer is thermodynamics, not construction: clustering hydrophobic tails away from water maximizes water's entropy, so bilayers, micelles, and liposomes form spontaneously. This links straight back to Unit 1 lipid chemistry — and forward to origin-of-life models, since abiotically formed fatty acids also self-assemble into membrane-bounded protocells.
Fluidity is regulated. Membrane fluidity depends on composition: unsaturated tails with cis-double-bond kinks pack loosely and fluidize; saturated tails stiffen; cholesterol buffers both ways, restraining phospholipid movement at warm temperatures while preventing tight packing in cold. Organisms tune composition homeostatically — cold-water fish membranes run rich in unsaturated phospholipids.
Permeability hierarchy and the mosaic. The hydrophobic core ranks what crosses unaided: small nonpolar (O₂, CO₂) freely; small polar (H₂O) slowly; large polar and ions effectively never — hence transport proteins, and hence the full fluid mosaic: integral and peripheral proteins, glycolipids and glycoproteins for recognition, all mobile in the lipid sea. Every membrane in the cell — organelle membranes included — is a variation on this one fabric, which is why vesicles can bud from one compartment and fuse with another.
